Gluten-Free, Vegan, Sugar Cookies
With all the hustle and bustle of the Christmas Season, everyone seems to be in a lull this year. In all fairness, we got our Christmas tree up, but it has taken me weeks to finish decorating, and Christmas totes still fill our kitchen.
Historically I start the Christmas season with about two days of Christmas treat baking! My favorite Christmas cookie is the sugar cookie, and with the great invention of parchment paper, my sugar cookies are fluffier than ever!
SUGAR COOKIES
Ingredients: 1 1/2 cups powdered sugar 1 cup Vegan butter, softened 1 teaspoon vanilla 1 tbsp Flax seed
3 tbsp Water
2 1/2 cups gluten-free flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Directions: Mix powdered sugar, butter, vanilla, flax seed, and water in a large bowl. Stir in the remaining ingredients. Cover and refrigerate for at least 2 hours. Heat oven to 375*. Cover cookie sheets with parchment paper. Divide dough in half, and roll each half 1/4 inch thick on a lightly floured surface. Cut into desired shapes with cookie cutters.
Bake for 10-12 min or until edges are lightly golden.
Let cool and decorate!
