Gluten-Free, Vegan, Pumpkin Madness
It's Harvest time and the weather here has been a bit chilly the past few days. In order to get into the spirit of the coming fall we have had pumpkin pie. Making a few family favorite recipes the pie vanished before our eyes and not even the crumbs remained. Here are a few of our favorite pumpkin pie recipes for you to start off your fall :)
Pumpkin Cheesecake
Crust:
1 3/4 cups GF graham cracker crumbs
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1 stick Vegan melted salted butter
Filling:
3 (8-ounce) packages Vegan cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk / Egg Substitute
1/4 cup Vegan sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
2 tablespoon GF flour
1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F.
Crust: In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.
Filling: Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.
Turtle Pumpkin Pie
Ingredients:
1/4 cup plus 2 Tbsp. Vegan caramel ice cream topping, divided
1 GF Graham Cracker Pie Crust (6 oz.)
1/2 cup plus 2 Tbsp. chopped Pecans, divided
2 pkg. (3.4 oz. each) Vegan Vanilla Flavor Instant Pudding
1 cup cold Almond milk
1 cup canned pumpkin
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tub (8 oz.) Vegan Whipped Topping, thawed, divided or 1 can coconut cream, whipped
Directions
Pour: 1/4 cup caramel topping into crust; sprinkle with 1/2 cup nuts.
Beat:next 5 ingredients in large bowl with whisk until well blended. Stir in 1-1/2 cups whipped topping; spoon into crust.
Refrigerate:1 hour. Top with remaining whipped topping, caramel topping and nuts just before serving.
