Peanut butter, Peanut butter Chip Cookies (GF, V)
These cookies are not for the faint of heart, calorie counters beware! These delicious peanut butter cookies are filled with gooey goodness. If you want you can leave out the peanut butter but we wouldn't, just saying... they are that good.
INGREDIENTS
2 1/4 cups gluten-free flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) vegan butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 tbsp ground flax seed
6 tbsp water
16 oz Peanut butter, softened
14 oz (2 x 7-ounce package) Choc Zero Peanut Butter Chips
DIRECTIONS
Preheat oven to 375° F.
In a bowl beat flax seed and water. Gradually beat in butter, granulated sugar, and brown sugar, and peanut butter in a large mixer bowl until creamy.
Fold in flour, baking soda, and salt, until no visible flour remains dry.
Stir in peanut butter chips.
Drop by rounded tablespoon onto ungreased baking sheets.
Bake for approximately 10 minutes or until golden brown.
Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
