Peach Upside Down Cake (GF,V)


Ingredients

Topping

  • 4 tbsp Vegan butter, diced

  • 3/4 cup brown sugar

  • 3 peaches sliced

Batter

  • 1 peach diced

  • 3 cups GF flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 1/3 cup Sugar (2/3 white sugar, 2/3 brown sugar)

  • 2/3 cup melted Vegan butter

  • 2 tbsp ground flaxseed meal

  • 6 tbsp water

  • 2 tsp vanilla

  • 1 cup Oat Milk or Milk substiute

Directions

Preheat oven to 350*


In an 8 x 13 " greased cake pan, place diced butter evenly spaced across the bottom—layer brown sugar on top of the butter and peaches on top of that.


Mix together flaxseed and water in a large mixing bowl. Add butter and sugar to the flaxseed and water mix and cream. Once the mixture is properly creamed add in oat milk & vanilla and mix well. Slowly add in salt, baking soda, baking powder, and flour. Once the batter is well mixed stir in once diced peach.


Layer batter on top of peaches, brown sugar, and butter layers already on the bottom of the pan.


Bake at 350* for 40 min or until golden brown. Once baked place a sheet or tray on top of the baked cake and flip the cake upside down, gently removing the baking pan.
