Gluten-Free, Dairy-Free, Loaded Cauliflower Bake

Ready to blow your family and friend's minds? Try this Loaded Cauliflower Bake...



INGREDIENTS

  • 3 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • ¾ teaspoon salt

  • 1 teaspoon pepper

  • 2 heads of cauliflower, cut into florets

  • 3 cups Vegan shredded cheddar cheese

  • 12 oz. vegan sour cream

  • 6 pieces of bacon


DIRECTIONS

  1. Preheat oven to 350°.

  2. In a large pot of salted boiling water, blanch the cauliflower for 3 minutes. Drain and squeeze cauliflower out of the water.

  3. Cut Chicken and Bacon into small bite-sized pieces and cook in a pan with a olive oil on the stove top.

  4. In a bowl add Cauliflower, sour cream, 2 cups cheese, chicken, bacon, salt, pepper

  5. In an ungreased 9”-x-13” dish, add mixture and top with 1 cup cheddar cheese

  6. Bake until cauliflower is tender and cheese is melty, 30 minutes.
