INGREDIENTS
3 boneless, skinless chicken breasts
1 tablespoon olive oil
¾ teaspoon salt
1 teaspoon pepper
2 heads of cauliflower, cut into florets
3 cups Vegan shredded cheddar cheese
12 oz. vegan sour cream
6 pieces of bacon
DIRECTIONS
Preheat oven to 350°.
In a large pot of salted boiling water, blanch the cauliflower for 3 minutes. Drain and squeeze cauliflower out of the water.
Cut Chicken and Bacon into small bite-sized pieces and cook in a pan with a olive oil on the stove top.
In a bowl add Cauliflower, sour cream, 2 cups cheese, chicken, bacon, salt, pepper
In an ungreased 9”-x-13” dish, add mixture and top with 1 cup cheddar cheese
Bake until cauliflower is tender and cheese is melty, 30 minutes.
