Date Bars ( GF, V)

Grab a sweet treat with these delicious date bars.

Ingredients

2 lbs Medjool dates (pitted & soaked)

4 cup walnuts chopped (or roasted date pits)

1 cup raw pumpkin seeds

1 cups hemp hearts

1 cup flaxseed meal

1 tsp sea salt


4 tbsp Earth balance butter (melted) or coconut oil

8 tbsp nut butter or sunflower seed butter

5 tbsp maple syrup (or honey)


Directions

Soak the dates in warm water for 15 minutes, then drain and proceed with the recipe. Combine dates, walnuts, pumpkin seeds, hemp hearts, flaxseed, and salt in a food processor. Process until it comes together as a smooth dough


  1. Line a 9x 13 baking tray with parchment paper. Then transfer the dough to the tray. Place a second sheet of parchment paper over the dough, press down and smooth across the baking sheet until it is evenly distributed

  2. Stir together the remaining ingredients in a small bowl. Drizzle/spread over the date layer. 

  3. Transfer to the freezer to set (about 30 mins). Cut and enjoy the goodness! Keep in the freezer.
