Gluten-Free, Vegan, CHOCOLATE CHIP COOKIE DOUGH FILLED CUPCAKES
This week I thought I'd dig out an oldie. Now for those who know me, know I myself am not a chocolate fan but on special occasions I will mask and glove up to make these special treats for special birthdays.
Cupcakes:
1 GF cake mix (and ingredients package calls for)
1 container vegan frosting
Cookie Dough Filling:
2 Cups GF Flour
1/2 tsp salt
3/4 Cups Vegan butter, softened
1 cup packed brown sugar
1/2 cup white sugar
1 tbs vanilla extract
4 tbs Almond Milk
Any amount of any kind you desire for chocolate chips!
( I used vegan milk chocolate and semi sweet regular size but mini would probably work best for filling.)
Directions:
1. Preheat oven to 350 degrees. Line cupcake pan with cupcake liners. Make cupcake batter according to directions. Bake cupcakes according to package directions. Let cool.
2. To make the cookie dough filling, combine all ingredients in a mixing bowl and mix well mixed. Cover with plastic wrap and refrigerate until the mixture has firmed up a bit, about a half hour.
3. To fill the cupcakes, cut a cylinder shaped portion out of the center of each cupcake. i used a small sugar spoon, but I've heard an apple corer works well for this! Fill each hole with a chunk of the chilled cookie dough mixture.
4. Frost cupcakes with frosting.
5. Garnish with chocolate chips !!!
** To fancy up your cupcakes, you can garnish them with mini chocolate chip cookies.**
