Gluten-Free Campfire Hash
While nothing in this dish may seem like a campfire, we often make it for camping and on nights that we need a simple dinner to get us going!
Hash
1 medium- large Sweet Potato
1 bunch Asparagus
Sausage Link (either Andouille, Keilbasa or this chicken & apple sausage works great)
1 can/ 16 oz. Garbanzo beans
Preheat oven to 350*
Line large baking dish with olive oil
Dice Sweet Potato and asparagus into bite sized pieces and place into pan.
Drain & rinse garbanzo beans, pour over potato and asparagus mix
Cut sausage as desired and placed on top of beans.
Cover with foil and bake for 45 minutes.
